Strawberry Fool
Ingredients
16 ounces strawberries, hulled and chopped
1 tablespoon granulated sugar
4 to 5 tablespoons confectioner’s sugar
16 ounces whipping cream
½ teaspoon vanilla extract
Fresh mint for garnish
Directions
Sprinkle the strawberries with the granulated sugar; stir to combine and let the mixture rest for a few minutes. Mash the berries with a fork—or with your hands, if you like (I dig in like I’m working a meatloaf mixture)—until soft and pulpy, then set aside while you tend to the next step.
In a large, clean mixing bowl, whip the cream, confectioner’s sugar, and vanilla extract until stiff peaks form. Gently fold in the mashed berries (a rubber or silicone spatula works well here) until evenly incorporated. Using an ice cream scoop, portion your fool into glasses or small cups; you can chill them or serve right away garnished with fresh mint leaves.
Note: Although serving it as described above is the traditional way to enjoy a fool, I can’t help thinking this recipe would be a fabulous cake or cupcake icing. So unbelievably simple and delicious!
