Roasted Garlic
Ingredients
Head(s) of garlic
Olive oil
Crusty bread
Salt
Directions
Cut off the very top of the head of garlic, exposing the tips of the cloves.
Place whole head in foil, drizzle with olive oil, add a pinch of salt and close up the foil. (To ensure that the garlic remains upright, place the head in the center of the foil and close up the top portion similar to a chocolate kiss.)
Place your garlic packet(s) on the coals and reposition every 10 minutes or so to roast evenly. It’ll take about 40 minutes, depending on the size of the garlic bulb and fire. To check for doneness, open the foil and gently squeeze the garlic. The cloves should have the consistency of toothpaste.
Scoop out the soft garlic cloves with a bread knife, spread onto slices of crusty bread, drizzle with a little olive oil, sprinkle with salt and enjoy!
*Alternatively, for indoor directions, simply place foil packets in a preheated 350°F oven and roast for about 55 minutes. No need to rotate the packets.
