Recipe Notes Adapted from The Hay Day Cookbook
Makes about 4 dozen cookies.

Ingredients

3 cups unbleached flour

½ teaspoon baking soda

½ teaspoon baking powder

pinch of salt

1 cup of sugar

¾ cup butter (1 ½ sticks), softened

1 whole egg

juice of 2 lemons

2 tablespoons grated lemon rind

granulated sugar

Directions

Stir together flour, baking soda, baking powder, and salt. In a separate bowl, beat together sugar and butter until light. Beat in egg. Add lemon juice and rind. Add the flour mixture. Form into a roll and wrap in waxed paper. Refrigerate overnight.

Unwrap dough and slice very thin. Preheat oven to 400 degrees F. Sprinkle the cookies with sugar and bake on an un-greased cookie sheet for 6 minutes. Cool on a rack.
