2 cups all-purpose flour

½ teaspoon salt

½ cup (1 stick) butter, chilled

4 to 5 tablespoons of ice water


Stir together the flour and salt. With a pastry cutter or two knives, cut the butter into the flour mixture until it resembles coarse meal. Add the ice water. Work the dough into a ball, and divide it into two even pieces. Each piece is one pie crust.
