We go blueberry crazy this time of year at Connecticut Country House! These summertime treats are sweet, juicy, and full of nutrients. Talk about an amazing food! (A quick Google search will reveal a head-spinning amount of information!) The basics are that they’re a natural source of both soluble and insoluble fiber, low in calories and fat, rich in Vitamin C and loaded with antioxidants. These of course are all fabulous reasons to incorporate blueberries into your diet. We love them eaten out of hand, scattered across cereal, tossed into salads, whipped into smoothies and baked into delectable desserts because they’re delicious and we can’t get enough of ‘em!
