Nothing hits the spot on a scorching hot day like an ice-cold glass of lemonade. In this take on a summertime classic, syrup made from sweet, juicy blueberries, is combined with the tang of fresh lemon juice. Delicious. Refreshing. Simply blue-tiful!

Finn’s Blueberry Lemonade

(Serves 4-6)

1 cup fresh blueberries

½ cup sugar

¾ cup freshly squeezed lemon juice

6 cups water

Fresh mint and additional blueberries for garnishing

Blueberry Syrup:

Combine sugar with 1 cup of the water in a medium sized saucepan.  Heat over medium heat, stirring until sugar dissolves.

Add blueberries and bring to a boil.  Reduce heat and simmer until blueberries start to break down, about 5 minutes.

Strain blueberry mixture through a fine sieve, into a bowl or a large liquid measuring cup.  Allow syrup to cool.

In a large pitcher, combine blueberry syrup, lemon juice and the remaining 5 cups of water.  Refrigerate until cold.

To Serve:

Add ice to glass. Top with lemonade. Garnish with a few blueberries and a sprig of mint.

Serving Options:

Fuzzy Finn: Add shots of vodka, to taste, to lemonade.

Fizzy Finn: Replace water with seltzer.
